2. The Coffee Was Ground Too Long Ago

Whole beans lose freshness gradually; ground coffee loses it much faster because far more surface area is exposed to oxygen. A bag of pre-ground coffee can be convenient, but it may produce little crema even when it was suitable for espresso when first opened.

6. This Coffee Naturally Produces Less Crema

If the beans are fresh and the shot tastes good, a modest crema layer may simply be normal.

Dark roasts commonly create a darker, more conspicuous layer, while light roasts may look thinner or paler. Coffees containing Robusta often produce more crema than all-Arabica coffees.
