Before coffee reaches a roaster, the beans must be separated from the cherry that grew around them — and how that separation happens changes the flavor of the cup more than most drinkers expect. The three names you see on bags — washed, natural, and honey — describe that process. None is better than the others; each creates a different flavor profile, and each has versions that can be excellent or disappointing. The coffee cherry and the seed
A coffee “bean” is actually the seed of a fruit, usually called a cherry. Around the seed are several layers: the skin, a layer of fruit pulp, a sticky mucilage, and a protective parchment. Producers with meticulous drying control can produce spectacular fruit-forward lots; producers without it can produce a bag that tastes like overripe fruit and damp straw. Honey processing: the middle path with many shades
Honey processing removes the skin but leaves some or all of the sticky mucilage on the seed while it dries. The name comes from the honey-like feel of the mucilage, not from actual honey. Depending on how much mucilage remains, producers label the result yellow, red, or black honey, with more mucilage meaning darker color, more fruit influence, and longer drying. In the cup, honey coffees usually sit between washed and natural: sweeter and fuller than washed, less aggressively fruity than many naturals.
The category is broad by design. A lightly processed yellow honey can taste almost washed, while a black honey can approach natural-level sweetness and body. When you see “honey” on a bag, ask which shade and how much mucilage was kept — the answer tells you more than the label alone.

Choosing processing for espresso
For espresso, your drink style is the best guide. If you pull straight shots and enjoy clarity and acidity, washed coffees often show the origin most precisely. If you drink mostly milk drinks, naturals and honey coffees bring body and sweetness that hold up well against milk. Blends often combine processed lots deliberately — a washed component for clarity and a natural component for fruit and sweetness.
