Step Four: Brew to a Measured Yield

A repeatable espresso recipe needs both an input and an output. The dose describes how much ground coffee is used; the yield describes how much espresso reaches the cup.

Many home setups require a separate scale beneath the cup. The scale must be small enough to fit on the drip tray, leave enough space for the cup, and remain readable while the shot is running.
