Crema is the golden foam layer that forms on top of a freshly pulled espresso. It appears within the first seconds of the shot, when pressurized water meets freshly ground coffee, and it is one of the most visible differences between espresso and every other brewing method. Crema also causes more confusion than almost any other coffee topic, because thick crema is often treated as proof of quality. This guide explains what crema actually is, why it forms, and how to read it without being fooled.

What crema actually is

Crema is a foam made of tiny gas bubbles wrapped in coffee oils and other dissolved solids. During espresso brewing, water is forced through finely ground coffee at high pressure — around nine bar in a standard extraction. That pressure dissolves carbon dioxide trapped in the roasted beans, and when the liquid emerges into normal air pressure, the gas comes out of solution as bubbles. Coffee oils and compounds from the beans coat those bubbles, which is what gives crema its structure and its hazelnut-to-rust color instead of plain white foam.

The crema layer is not one uniform thing. On a well-pulled shot you often see a deeper rust-colored layer at the bottom and a lighter foam above it, sometimes with darker streaks where the stream hit the cup. Those streaks are part of the same foam system, not a separate ingredient.

Why crema forms during espresso

Three things must happen for crema to appear: the coffee must contain enough trapped carbon dioxide, water must extract oils and solids from the grounds, and the brew must be pressurized. Roasting creates carbon dioxide inside the bean, which is why freshly roasted coffee produces noticeably more crema than coffee that has sat in a bag for months. The high pressure of espresso forces the gas into the liquid, and the oils and fine coffee particles act as the stabilizer that keeps the bubbles from collapsing instantly.

That is why other brewing methods do not produce crema: filter coffee and French press release carbon dioxide at ordinary pressure, so the gas escapes without forming a pressurized, oil-stabilized foam. What affects how much crema you get

Bean freshness is the largest factor. Coffee that is too fresh — roasted only a day or two ago — can produce an aggressively foamy, unstable crema, while coffee at its usual espresso resting window (often several days to a few weeks after roast, depending on the roast) settles into a steadier layer. As beans age further, crema thins because the trapped carbon dioxide escapes. Roast level also matters: darker roasts generally release more gas and oil, which can mean more crema, but abundance is not the same as stability or flavor. Grind, dose, and pressure change the extraction, and water chemistry can influence how the foam holds.

Blend composition matters too. Robusta is known for producing thick, persistent crema, which is one reason it appears in many espresso blends; a lighter, single-origin arabica may produce a thinner layer that disappears more quickly. Neither result tells you which cup will taste better — it tells you what the coffee is made of.

Machine behavior shapes crema as well. Pressure stability and temperature affect how the gas and oils emulsify, so the same beans can produce different crema on different machines — and even on the same machine as it warms up or ages. That is another reason to build a baseline on your own setup instead of comparing your cup to a photo from another machine: crema is a product of the whole system, not just the bag.

What crema does to the cup

Crema is not just decoration. It carries volatile aromas that you smell before you sip, which is part of espresso’s intense first impression. It also adds texture: the fine bubbles give the mouthfeel a silky weight that blends with milk in a latte or cappuccino. In straight espresso, the crema layer can influence how bitter or bright the first taste seems, because the foam holds some of the extracted compounds. If you stir the shot, the crema breaks and the flavor profile changes — which is why some drinkers stir and others intentionally do not.

In milk drinks, crema does two jobs. It provides the contrast that makes latte art visible, which is why the espresso under your milk needs a fresh, well-formed layer rather than a pale or broken one. And it contributes to the first impression of the drink — the crema-rich top notes mix with the milk foam as you sip. If your milk drinks look flat, the espresso base is often the culprit before the milk is; a shot with almost no crema leaves little for the milk to contrast against.

Why crema is not a quality score

Stale beans usually produce less crema, so very thin crema can be a freshness clue — but it is a hint to check the roast date, not a verdict on the cup. The honest way to judge espresso remains taste: sweetness, acidity, body, and balance. Use crema as one observation among several, never as the score.

This is why cupping and tasting matter more than photography: crema photographs beautifully, but the same thick layer can sit on a bitter, over-extracted shot and on a balanced, sweet one. If you judge espresso by the foam, you are judging the beans’ gas and oil content — interesting information, but not flavor. Judge the cup by its taste, and use crema only to decide what to investigate.
