Espresso asks a lot from a small amount of coffee. Hot water must extract enough flavor in less than a minute while passing through a compact puck under pressure. The grind needs to be fine because fine particles provide a large surface area for extraction and create enough resistance to control the flow of water.

You cannot judge grind size from time alone. A shot producing 25 grams of espresso in 25 seconds is different from one producing 50 grams in the same period.
Always define three measurements:
- Dose: the dry coffee placed in the basket.

A practical starting recipe is:
- 18 grams of dry coffee

How Puck Preparation Affects a Fine Espresso Grind
Fine coffee is more sensitive to clumps and uneven density. A few dense areas or hidden gaps can change how water moves through the entire puck.
A simple preparation routine is usually enough:
- Weigh a consistent dose.
- Place the grounds evenly across the basket.
- Break up obvious clumps.
- Level the coffee before tamping.
- Tamp once with the tamper parallel to the basket rim.
- Handle the portafilter gently after tamping.
Distribution tools can help, but only when used correctly. WDT needles can break apart clumps and redistribute coffee throughout the depth of the basket. A surface leveler mostly changes the top layer and cannot always correct density differences deeper in the puck.
